Granite is a natural igneous stone, quarried in huge blocks and sliced into slabs. Every slab is genuinely one of a kind, with the speckled, granular pattern most people picture when they hear the words "stone countertop."

Quartzite — and the name trips everyone up — is not quartz. It is a natural metamorphic stone: sandstone that was compressed and heated over geologic time until it recrystallized into something harder than granite. Popular varieties like Taj Mahal and White Macaubas deliver the soft veining of marble with far better toughness. Showroom staff sometimes blur the quartz/quartzite line; after this article, you won't.

Durability: Scratches, Chips, and Heat

Scratch resistance

Quartzite is the hardest of the three — around 7 on the Mohs scale — and will dull a knife before the knife marks it. Granite sits close behind and shrugs off daily wear. Quartz is hard as well, but its resin content makes it slightly softer than the natural stones, and a dragged cast-iron pan can leave a mark. In practice we tell every client the same thing: use a cutting board on all three, and scratch resistance stops being a deciding factor.

Heat

Here the materials truly diverge. Granite and quartzite were formed by heat and tolerate a hot pan set directly on the surface. Quartz does not: its resins can scorch or discolor at roughly 300°F, and one forgotten skillet can leave a permanent whitish ring near the cooktop. If you cook hard and know trivets will be forgotten in your house, natural stone is the safer bet.

Chips and impact

All three can chip on edges and around sink cutouts if struck hard with something heavy. Quartz repairs blend well because the color runs consistently through the slab; granite and quartzite chips can usually be filled by a fabricator so the repair disappears into the natural pattern. An eased or rounded edge profile chips far less than a crisp square one — worth remembering when you pick the edge.

Porosity and Sealing: The Real Maintenance Question

Quartz is non-porous. Red wine, coffee, lemon juice, and turmeric wipe off, and it never needs sealing — this single fact is why quartz ends up in roughly two out of three kitchens we build. Granite is mildly porous: a penetrating sealer applied at installation and refreshed about once a year keeps it stain-resistant. The test is simple — when water stops beading on the surface, it is time to reseal, a twenty-minute wipe-on job rather than a project. Quartzite is the wildcard. Some varieties are dense and nearly maintenance-free; others are noticeably porous and want sealing once or twice a year. That is exactly why we insist on water-testing the actual slab before purchase, never just a sample chip from a rack.

Looks: Factory Consistency vs Natural Drama

Quartz wins on predictability. One caveat: most quartz is not UV-stable, so it can yellow in strong direct sun. For an outdoor kitchen or a counter under a big south-facing window, choose natural stone.

Granite offers genuine uniqueness — movement, mineral flecks, colors no factory reproduces. Honed and leathered finishes have quietly modernized granite; it no longer has to read as a 2005 kitchen.
